Hasselt (The Brussels Morning Newspaper): The Herkenrode Cantor is a special beer made by mixing Herkenrode Cister blond beer with Fryns Vieux Système genever and herbs giving it a tasty aromatic flavor with 7.5% alcohol.

The Herkenrode Cantor is a special beer made by mixing Herkenrode Cister blond beer with Fryns Vieux Système genever and some herbal distillates.It has been said that the base beer Herkenrode Cister is a light golden blond beer known for its smooth malt sweetness and balanced hop bitterness giving it a crisp and refreshing taste. By adding Fryns Vieux Système genever, a Dutch gin infused with juniper berries and other plants, the beer gets a mix of herbal and slightly spicy flavors. This combination enhances the beer with the unique and aromatic essence of genever, making it even more flavorful.

What makes Herkenrode Cantor beer unique and flavorful?

It has been said that the Herkenrode Cantor beer gets even more interesting by adding concentrated extracts from herbs and plants. These extracts bring out subtle flavors making the beer more complex and sophisticated. The final result is a blend of the smooth maltiness of Herkenrode Cister the aromatic richness of geneve, and the herbal elements. According to Céleste Fryns from Fryns distillery the Herkenrode Cantor is special for its elegance and taste, showing a great mix of flavors that highlight the expertise that went into making it.

Jef Cornelissen from the Cornelissen brewery explains more about the Herkenrode Cantor. The beer begins as a blonde beer that undergoes a second fermentation in the bottle making it fizzy and enhancing its flavors. Initially it has 6.5% alcohol content and this process helps improve its taste as it ages. The final Herkenrode Cantor beer has 7.5% alcohol when Fryns Vieux Système genever is added to the base beer. This higher alcohol level comes from the genever infusion which not only makes the beer stronger but also changes its flavor. The genever brings a unique herbal and aromatic twist to the beer while also making it smoother. By mixing with the beer the genever tones down the strong alcohol taste and blends its flavors well. This mix ensures that the Herkenrode Cantor beer tastes refined and balanced with the genever enhancing rather than overpowering the original beer’s character.
